Carob Brownies

These cheeky little numbers are a fabulous alternative to the traditional chocolate brownie. Naturally sweet, moist and nutritious – a much healthier option, which means they are a guilt free treat.

Ingredients

  • 1/2 cup of coconut oil
  • 1/3 cup of carob powder
  • 10 pitted Medjool dates
  • 1 cup of coconut milk
  • 1/2 cup of gluten free self-raising flour
  • 1/4 cup desiccated coconut
  • 1/4 cup ground almond
  • 1 tsp vanilla essence

Method

  1. Soak Medjool dates in hot water
  2. Preheat the oven to 180ºC/350ºF/gas 4. Grease a rectangular baking tin (roughly 20cm x 30cm) with a little oil, then line with greaseproof paper
  3. Melt the coconut oil in a pan and leave to cool
  4. Sieve the flour and carob powder into a large bowl, then stir in the grounded almonds and desiccated coconut
  5. Take the soaked dates and 4 tbsp of the soaked water and blend until smooth
  6. In a separate bowl mix in the coconut oil, coconut milk, vanilla essence and date puree
  7. Add the wet ingredients to the dry ingredients and stir
  8. Pour the mixture into the prepared tin and spread evenly
  9. Sprinkle over a pinch of desiccated coconut
  10. Place into the hot oven for 20 minutes
