Chocolate Chip Cookies

Ingredients

  • 2 cups water
  • ¾ dry red lentils
  • ½ cup ground almonds
  • 3 tbsp coconut sugar
  • 1 tbsp coconut oil
  • 1 tsp vanilla extract
  • ½ tsp baking powder
  • 2 tbsp dairy free chocolate chips

Method

  1. In a saucepan boil the water, add the lentils and leave to simmer for 20 minutes
  2. Preheat the oven 190º/gas 5 and line a baking tray with greaseproof paper
  3. Once lentils are soft remove from heat and drain through a strainer rinsing with cool water
  4. Use the back of a spoon to press out any excess water
  5. Using a food processor, blend the ground almonds, lentils, coconut sugar, vanilla extract and baking powder
  6. Process until smooth
  7. Using a spoon scoop 2 tablespoons of mixture (which has an almost paste like consistency) onto the greaseproof paper
  8. Spread out evenly into a smooth circle
  9. Sprinkle the chocolate chips on top
  10. Place in the oven for 20 minutes or until golden brown
  11. Allow to cool completely
  12. Enjoy!
