Coconut, Vegetable and Turkey Mince

With a bowl full of flavour your fussy little eater will hardly notice those veggies that are usually pushed to the side of their plate. We like ours with quinoa or rice.

Ingredients

  • 1 tbsp olive oil
  • 1 medium onion
  • 2 cloves of garlic
  • 400g turkey mince
  • 1 lime + zest
  • 1 cup of fresh parsley
  • 2 bay leaves
  • 1 tin coconut milk
  • 1 low salt chicken stock
  • 1 red bell pepper
  • 100g kale
  • 150g mushrooms (I use Portobello mushrooms as they are rich in Vitamin D)
  • 125g cherry tomatoes

For the adults

  • 1 tsp chili flakes
  • Salt & pepper to taste

Method

  1. Prepare your ingredients by washing and chopping the vegetables
  2. In a large saucepan heat the olive oil and sauté the onion, garlic and bay leaves
  3. Once the onion has softened add the turkey mince
  4. With a wooden spoon break up the mince
  5. Once browned, add the parsley, the lime juice and zest, mushrooms, tomatoes and peppers
  6. Add the coconut milk and chicken stock cube
  7. Allow to simmer for 20 minutes
  8. In the meantime, prepare the rice, quinoa or buckwheat to serve
  9. Wash the kale and add to the mince
  10. Continue to simmer for another 5-10 minutes
  11. Allow to cool and serve

Note: With a fussy 18 month old I tend to blend the mince and vegetables and serve with a side dish before adding a tsp of chili for the adults!
