Granola Bars

These No Bake Granola Bars are super quick, easy and everything you would expect from a delicious and healthy snack.

Ingredients

  • 3 tbsp (180g) coconut oil
  • 3 tbsp (180g) honey
  • 2 ½ cup rolled oats
  • ½ cup chopped dates
  • ¼ cup desiccated coconut
  • ¼ cup ground almonds
  • ¼ cup ground sunflower seeds
  • Note: I alternate between different nuts and seeds to give my family a range of nutritional benefits

Method

  1. Line a rectangular baking tray (roughly 20cm x 30cm) with grease proof paper
  2. Melt the coconut oil and honey in a pan on a low heat
  3. Mix in the chopped dates to start softening
  4. Stir in the desiccated coconut, nuts and seeds
  5. Add the oats and stir until thoroughly combined
  6. Press the mixture into the prepared baking tray
  7. Refrigerate and leave to set for at least 4 hours
  8. Cut into bar shapes, wrap and keep refrigerated until ready to use
