Vegan and Gluten Free Pancakes


A super quick and easy vegan and gluten free pancake recipe the whole family can enjoy. Perfect for those busy mornings when you need to get breakfast on the table fast. Top the pancakes up with super fruits to turn them into a nutritious and delicious breakfast treat.


  • 1 cup oat milk
  • 1 cup gluten free plain flour
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • A pinch of Himalayan salt
  • 1 tsp coconut oil


  1. Heat the coconut oil in a frying pan or griddle over medium heat
  2. Mix the flour, baking soda and salt in a mixing bowl
  3. Add the oat milk and vanilla extract
  4. Mix until smooth
  5. Spoon the pancake mixture into the pan
  6. When you see bubbles in the middle of the pancake, carefully flip
  7. Enjoy with your favorite toppings (ours are strawberries, raspberries, blueberries and bananas with a drizzle of maple syrup or honey)
